Lemon Wafer Muffins
Ingredients
- 5.3oz baking flour
- 5.3oz granulated white sugar
- 2/3 cup of milk
- 1 egg
- Pinch of salt
- 1 tbsp vanilla extract
- ¼ cup of vegetable oil
- 5.3oz Lago Lemon wafer cookies
- 1 tbsp baking powder
- Butter

Preparation
- Preheat the oven at 340F
- Crumb all the Lago Lemon wafer cookies
- In a large bowl, mix together the wafer crumbles, egg, flour, vanilla, oil, milk, salt, sugar and baking powder with an electric handheld mixer until they are smooth.
- Butter and flour the mold and pour the batter into the mold until it is filled.
- Bake the muffin for about 25 minutes or until a toothpick inserted into the center comes out clean.
